California Avocado-Horseradish Spread

From the 50+ Friends Cookbook.


Ingredients

1 California avocado
2 tablespoons onion, finely chopped
2 tablespoons lemon juice
1 tablespoon prepared horseradish or to taste, depending on the strength
1/8 teaspoon salt

Directions

Roughly mash the avocado, then add the remaining ingredients. Chill one hour to marry flavors.

Serve on roast beef and corned beef sandwiches, or alone spread on bagels, crackers or smoked salmon.
