Chicken Flautas
Ingredients
2 cups finely chopped, cooked chicken
2/3 cup of your favorite salsa
1/3 cup chopped green onions
1 teaspoon ground cumin
30 to 34 corn tortillas
2 cups shredded Monterey Jack cheese
Oil
Optional toppings: guacamole, chili con queso, chopped tomatoes, additional green onions, black olives, sour cream, etc.
Directions
In a bowl, combine the chicken, salsa, green onion and cumin. Mix well.
Heat a small amount of oil in a small saucepan. Add one tortilla at a time, and cook about one second per side to soften. Place on paper towels to drain.
Divide the chicken mixture between all of the tortillas. Roll up tightly and place seam side down in a baking pan. Bake at 400 degrees F for 20 minutes or until crisp.
Suggestions
Serve warm with desired toppings. Makes 30 to 34 appetizer servings.
