Chickpea and Spinach Spread
Ingredients
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 can (19 ounces) chickpeas, drained
2 teaspoons chopped fresh parsley
2 teaspoons chopped fresh chives
1 small red bell pepper, diced
Juice of one lemon
1/3 cup olive oil
Salt and pepper, to taste
1 French baguette, cut into rounds and toasted
Directions
Combine all the ingredients in a bowl. Spread on the toasted French bread rounds.
