Crunchy Crab Crostini
Ingredients
8 ounces crabmeat (imitation can be used)
1/2 cup diced red pepper
4 tablespoons mayonnaise
2 tablespoons fresh parsley
1 tablespoon fresh chives
1 tablespoon lime juice
1 tablespoon Dijon mustard
3 teaspoons grated parmesan cheese
4 to 5 drops hot pepper sauce
16 slices French loaf or Italian bread
Directions
Preheat broiler. Line a broiler pan with foil.
Blend all ingredients except bread. Spread 1 tablespoon of the mixture on each bread slice. Place bread slices on the broiler pan, and broil 4 inches from the heat for five to six minutes or until lightly browned.
