Easier-than-you-think Eggrolls
Allison Huller McAlister
These pork eggrolls are extremely flavorful and fairly easy to prepare. I may just have to quit buying the prepackaged frozen ones at the grocery store!
Ingredients
2 tablespoons vegetable oil
1/2 pound lean, ground pork
2 cloves garlic, minced
1 onion, thinly sliced
3 cups prepackaged cole slaw blend
1 tablespoon soy sauce
15 eggroll wrappers
Salt and pepper, to taste
Directions
Heat oil in skillet and saute garlic and onions until tender. Add pork and saut矵ntil browned. Add cabbage blend and cook until crisp-tender, about five to 10 minutes. Remove from heat. Season with soy sauce. Add salt and pepper to taste. Cool mixture.
To assemble egg rolls: Carefully separate egg roll wrappers. Lay one wrapper on clean surface. Place about 2 tablespoons of the filling near the edge closest to you. Roll edge toward the middle. Fold in both sides and continue rolling. Moisten opposite edge with water to seal. Repeat with other wrappers. Deep fry at 350 degrees F (I just use my Fry Daddy) until golden brown, about three minutes on each side. Drain on paper towels.
Suggestions
Ground turkey or chicken could be substituted for the pork.
