Fava Bean Spread
Ingredients
2 cups dried fava beans
1/3 cup olive oil
1 onion, chopped
2 teaspoons sugar
3 cups water
Juice of half a lemon
1/2 to 1 teaspoon fresh dill
Salt and pepper, to taste
Directions
Soak the beans overnight. Drain and remove skins. Rinse again.
Heat the oil in a skillet. Add the onions and cook until soft, about five minutes. Add the beans, water, sugar, salt and pepper. Bring to boil, reduce heat and cook, covered, for about 45 minutes. Add the lemon juice and dill and cook about five minutes more.
Using a hand-held blender, puree until almost smooth. Pour into a serving bowl and refrigerate at least one hour (mixture will get firm). Garnish with additional dill sprigs.
Suggestions
Serve with bread slices or your favorite crackers.
