Ole Endive
Ingredients
2 cups shredded Monterey Jack cheese
1/3 cup mayonnaise
1/3 cup of your favorite salsa
3/4 cup diced radishes
3/4 cup chopped green onion or green pepper
1 avocado, chopped
Belgian endive leaves
Directions
Combine the cheese, mayonnaise and salsa in a blender. Pulse until smooth. Transfer to a large mixing bowl and add the radishes and green onion. Mix well. Season with salt and pepper, if desired.
Spoon about 1 tablespoon of the mixture into each endive leaf. Top with a small piece of avocado. Cover and refrigerate until ready to serve.
Suggestions
Tortilla chips can be substituted for the endive.
