Sesame Seed Balls
Ingredients
1 pound sticky (glutinous) rice flour
1 1/4 cups dark brown sugar
1 1/4 cups boiling water
1 cup sweet red bean paste
1/4 cup sesame seeds
Oil for frying
Directions
In a bowl, combine the brown sugar and boiling water. Stir to dissolve. Set aside. In another bowl, add the rice flour. Pour in the brown sugar water and stir until combined. With floured hands, shape the dough into 2-inch balls.
Form the sweet red bean paste into 1-inch balls. Push your thumb into the side of the rice flour balls, insert a bean paste ball, then form back into a ball, covering the sweet bean paste completely.
Pour the sesame seeds into a shallow dish. Dredge each ball gently into the seeds to cover all sides.
Fill a large pot or deep fryer with oil. Heat to 350 degrees F. Cook the balls, a few at a time, until lightly browned, about two to three minutes. With a spatula, carefully push the balls against the sides of the fryer – the balls will double in size. Cook until golden brown. Remove and drain well on paper towels.Serve.
