Spicy Black Bean with Mango Salsa
Ingredients
2 cans (15 3/4 ounces) black beans, drained and rinsed
2 oranges, peeled, seeded and chopped
2 mangos, peeled, pitted and chopped
1/2 a sweet red pepper, cored, seeded and chopped
3 serrano chiles or 1 large jalapeno chile, seeded and thinly sliced
2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
1 teaspoon grated fresh ginger
Directions
Combine all ingredients in a large bowl and mix well. Tightly cover and place the mixture in the refrigerator for several hours or overnight.
Suggestions
Serve with hot tortilla chips or chunks of Cuban or French bread to please the most finicky of appetites.
