Happy Hummus
Recipe is from The Petit Appetit Cookbook: Easy, Organic Recipes to Nurture Your Baby and Toddler (HP Trade, 2005) by Lisa Barnes
Ingredients
2 cups cooked or canned organic chickpeas (garbanzo beans)
1/3 cup tahini sauce (sesame seed paste)
1 large clove garlic, minced
Juice of 1 lemon
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
Directions
If using canned chickpeas, drain and rinse thoroughly until water is clear. Process chickpeas, tahini, garlic, lemon, 1 tablespoon of the oil and cumin in food processor or blender until pureed. Scrape down sides of bowl and add remaining 1 tablespoon oil. Process for 20 to 30 seconds, or until pastelike. If you want a smoother consistency, add more oil or lemon juice and continue to process. Makes 2 1/3 cups.
Note: You say garbanzo, I say chickpea. Some people call this main ingredient chickpeas while others refer to them as garbanzo beans. Either way they are a great source of protein for the whole family.
Suggestions
Hummus makes a great dip with vegetables for toddlers, as well as quick hors d'oeuvres for parents. Hummus is also an alternative spread for sandwiches, bagels and toast. At 10 months this was my son's favorite food, especially spread on small pieces of whole-wheat toast.
