Best Banana Wheat Muffins


Nutritious and delicious!

Ingredients

1 cup all-purpose flour
1 cup whole-wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
1/4 cup milk
1 1/3 cups mashed bananas
2 large eggs
1/2 cup sugar
1/2 stick softened unsalted butter
1/2 teaspoon salt

Directions

Preheat your oven to 375 degrees F and grease a muffin pan.

In a large bowl, stir together the flours, baking soda, salt and baking powder. In a second bowl, stir together the vanilla, milk, eggs, bananas, butter and sugar until the mixture is well blended.

Make a well in the center of the dry ingredients while adding the liquid ingredients and stirring together until it is combined. Spoon the batter into the muffin pan and bake 15 to 18 minutes, or until a toothpick comes out clean.

Remove the muffin pan and cool muffins in pan on a wire rack for four minutes. Remove the muffins from the pan and continue cooling them on the rack.

Suggestions

Serve muffins warm or allow to cool completely and store in an airtight container at room temperature. For extra pizzazz, stir a cup of chopped walnuts into the batter.
