Cheesecake Muffins with Fruit Topping

Cook Time: Cooking time = 20 minutes
A simple dessert that will impress your guests!
Ingredients
2 package (8 ounces each) cream cheese
3/4 cup sugar
2 eggs
2 teaspoons vanilla
Vanilla wafers
1 can pie filling
Directions
Beat cream cheese, sugar, eggs and vanilla with electric mixer until smooth. Place one vanilla wafer in the bottom of 12 to 14 paper cupcake liners. Fill 3/4 full with the batter.
Bake at 375 degrees F about 20 minutes or until tops start to crack. Chill.
Serve with a spoonful of pie filling on top (blueberry, cherry or strawberry works well).
Suggestions
Variations:
Add 3/4 cup of miniature chocolate chips to batter and omit the pie filling.
