Duggar Family Mouthwatering Homemade Rolls

iParenting's Mom of the Month (and a mother of 18!) shares a favorite family recipe.
Ingredients
1/2 cup shortening
1/2 cup sugar
1 teaspoon salt
2 packages yeast
2 cups flour
Hot water
3 cups flour
1/2 cup (1 stick) butter, melted
Directions
Combine the first five ingredients in a large bowl. Cut with a pastry cutter. Beat the two eggs in a 2-cup measuring cup. Fill the cup to the 2-cup mark with hot water. Pour over dry mixture. Slowly add 3 cups of flour. Cover and let rise for 20 minutes in a warm oven. Pour onto a floured surface.
Knead the dough. Flatten with hands into a large pizza shape. Cut with a pizza cutter into 16 slices. Roll up from wide end to point. Place on greased pans, leaving a space for the rolls to double in size (can shape like a crescent or lay on side where swirl shows). Cover. Let the dough rise in a warm oven at least 20 minutes.
Remove dough from oven. Preheat oven to 375 degrees F. Bake 20 to 30 minutes, depending on how dark you prefer them. Immediately brush the tops with the melted butter. Makes 16 rolls in two 13x9-inch baking pans.
