Hoecakes
Ingredients
1 cup self-rising flour
1 cup self-rising cornmeal
2 eggs
1 tablespoon sugar
3/4 cup buttermilk
1/3 cup water
1/4 cup canola oil
Oil for frying
Directions
Combine all ingredients, except oil for frying, in a bowl. Mix well.
Heat about 1 inch of oil in a large skillet over medium heat. Drop batter by heaping tablespoons into hot oil, pushing a bit with a spatula to form a small "cake." Fry until golden brown on each side, about two minutes per side. Drain on paper towels.
