Strawberry Cream Cheese Muffins
Ingredients
1 egg
1 cup milk
3 tablespoons oil
2 cups flour
2 teaspoons sugar
3 teaspoons baking powder
1 container frozen strawberries, thawed
1 package (8 ounces) cream cheese, softened
Directions
Grease muffin pans.
Combine all dry ingredients. Combine all wet ingredients. Mix together until lumpy. Set aside.
Combine strawberries and cheese in separate bowl. Fill prepared muffin tins 1/3 full with batter. Add 3 tablespoons of the strawberry mixture. Top with remaining batter so that each muffin cup is 2/3 full.
Bake at 400 degrees for 20 to 25 minutes.
Suggestions
Makes 12 to 14 muffins.
