Texas Spoon Bread


A creamy bread you serve with a spoon

Ingredients

3 cups milk
1 cup yellow cornmeal
2 tablespoons butter or margarine
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon baking powder
3 eggs, separated

Directions

Scald the milk in a saucepan, then stir in cornmeal. Reduce heat and simmer, stirring, about five minutes.

Remove from heat and stir in butter, sugar, salt and baking powder. Beat the egg yolks together in a bowl, then add a small amount of the hot liquid. Pour all the yolks into the mixture and stir.

Beat the egg whites until they form soft peaks and fold into hot mixture. Pour into a greased 8-inch square baking pan.

Bake at 350 degrees F for about 40 minutes.

Suggestions

Serve this bread with a spoon and extra butter to spread on it. To spice up the bread, chopped jalapenos could be added.
