Cream Cheese

A simple dessert that will impress your guests! |

2 package (8 ounces each) cream cheese
3/4 cup sugar 2 eggs 2 teaspoons vanilla Vanilla wafers 1 can pie filling |
| Beat cream cheese, sugar, eggs, and vanilla with electric mixer until smooth. Place one vanilla wafer in the bottom of 12- 14 paper cupcake liners. Fill 3/4 full with the batter. Bake at 375 degrees F about 20 minutes or until tops start to crack. Chill. Serve with a spoonful of pie filling on top (blueberry, cherry, or strawberry works well). |

Variations:
Add 3/4 cup of miniature chocolate chips to batter and omit the pie filling. |
