Peach

If you're bored of plain blueberry or oat bran muffins, try this different recipe!

1 cup chopped peaches (frozen, fresh or canned
--well drained) 1/2 cup margarine 3/4 cup sugar 1 egg or 2 egg whites at room temperature 1 1/2 cups flour 1 teaspoon vanilla 1/2 cup plain yogurt 3 teaspoon baking powder |
| Cream margarine, then add sugar and beat until light and fluffy. Add egg(s) and beat well. Sift together flour and baking powder. Set aside. Beat vanilla and yogurt into creamed mixture and stir in flour mixture. Chop peaches into small pieces, about 1/4-inch in thickness. Add fruit to mixture and stir briefly to blend. Drop by spoonfuls into well-greased muffin tins. Bake at 400 degrees F for 20 minutes or until nicely browned. |
