Apple Buttermilk Pancakes

iParenting's Dad of the Month and author of Orso: The Troll Who Couldn't Scare (CDS Books, 2005), shares a family favorite!
Ingredients
2 cups flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 eggs
2 1/2 cups buttermilk (or enough to make it runny)
2 tablespoons oil
2 apples, peeled and grated
Directions
Mix dry ingredients. Beat eggs and mix with wet ingredients. Fold dry ingredients into wet. Add apples. Fry in a skillet.
Suggestions
Serves four to six people (or trolls).
