Asparagus Quiche
Ingredients
Crust:
1 cup flour
1/2 cup shortening
1 teaspoon salt
1/4 cup ice water
Filling:
1 1/2 cups cottage cheese
2 tablespoons flour
4 eggs
2 cups milk
1 1/2 teaspoons Dijon mustard
2 cups sliced fresh asparagus spears
1 cup grated Swiss cheese
Directions
For the crust, combine the flour, shortening and salt. Mix until crumbly. Slowly add the ice water to make a dough. Roll the dough out on a floured surface to fit a 10-inch pie plate. Push dough into pie plate, then prick the bottom several times with a fork. Bake at 350 degrees F for about 15 minutes, or until lightly browned.
In a large bowl, combine the cottage cheese, flour, eggs, milk and Dijon mustard. Season with salt and pepper to taste. With a hand blender, blend until smooth (or pour into a blender in batches). Pour into the prepared crust. Arrange the asparagus over the top. Sprinkle with the Swiss cheese. Bake at 375 degrees F for 20 to 25 minutes, or until set.
Suggestions
Serve with a salad or fresh tomato slices and a loaf of French bread.
