Creamy Apple Cinnamon Quinoa
Ingredients
1 cup quinoa, rinsed well and drained
2 cups water
2 cups apple juice
2 tablespoons lemon juice
1/2 to 1 teaspoon cinnamon, or more to taste
Dash of salt
1 1/2 to 2 teaspoons vanilla
Dash of nutmeg
Directions
Bring the quinoa and water to a boil in a saucepan. Cover, reduce heat and simmer until all the water is absorbed and quinoa is tender, about 15 minutes. Stir in the apple juice, lemon juice, cinnamon, salt and nutmeg. Cover saucepan and continue to cook 10 to 15 minutes longer. Add vanilla. Cool slightly and serve.
Suggestions
Variation: For older children and adults, 1 cup of raisins, dates, dried cranberries or dried cherries can be added with the apple juice and seasonings. This is not recommended for younger babies as raisins can be a choking hazard.
