Dressed-up Scrambled Eggs
A new twist on the traditional scrambled egg.
Ingredients
2 cups frozen hashbrowns
1 cup fully cooked ham, chopped
1 small onion, chopped
2 tablespoons oil
6 eggs
1 cup cheese, shredded (cheddar, mozzarella, Monterey Jack or your favorite)
Salt and pepper, to taste
Directions
Cook the potatoes, ham and onion in oil for about 10 minutes.
Beat the eggs in a small bowl and add salt and pepper. Add the eggs to the skillet and cook until eggs are set. Remove from heat and stir in cheese.
