Eggs Sardou
An elegant way to begin the day!
Ingredients
2 egg yolks
Dash of red pepper sauce
1/4 teaspoon lemon juice
6 ounces butter, melted
1 1/2 cups frozen creamed spinach, thawed
1 can artichoke hearts, drained well and cut up
4 eggs, poached
Salt and pepper, to taste
Directions
Combine the egg yolks, red pepper sauce and lemon juice in the top of a double boiler. Cook, stirring constantly, about two minutes or until thick. Remove from heat and stir in the butter. Season with salt and pepper to taste. Set aside.
Heat the creamed spinach in the microwave until hot. Distribute equally on four plates. Divide the artichoke hearts and place on top of spinach, then top with a poached egg. Spoon the sauce over the top. Serve.
Suggestions
Serve with fresh fruit and an English muffin.
