Mean Homemade Waffles

"I like to put butter and powdered sugar on top for myself; the kids prefer Ms. Buttersworth syrup or maple syrup," says Dad of the Month Jason Lensch.
Ingredients
2 teaspoons double-acting baking powder
1/2 teaspoon salt
1 tablespoon sugar
1 3/4 cups white flour
3 egg yolks
2 to 7 tablespoons melted butter or oil
1 1/2 cups milk
3 egg whites
Directions
In a large bowl, combine the baking powder, salt, sugar, flour and egg yolk. Beat well. Add the melted butter and milk.
In a separate bowl, beat the egg whites to a firm consistency. Fold egg whites into batter.
Cook in a waffle iron according to manufacturer's directions.
Suggestions
Makes about six waffles.
