Melt in your Mouth Oven Pancake

Prep Time: Prep time = 10 minutes
Cook Time: Cooking time = 15 to 20 minutes
On a special morning, this pancake is a show stopper. Its golden, puffy appearance and wonderful taste will help everyone start the day on the right foot.
Ingredients
1/2 cup flour
1/2 cup milk
2 eggs, lightly beaten
Nutmeg
4 tablespoons butter
2 tablespoons confectioners sugar
Lemon juice
Directions
Preheat oven to 425 degrees F.
In mixing bowl, combine flour, milk, eggs and pinch of nutmeg. Beat lightly, leaving batter lumpy.
Melt butter in 12-inch ovenproof skillet. When it is very hot, pour in batter. Bake in oven for 15 to 20 minutes or until pancake is golden brown and puffy. Sprinkle with confectioners sugar and return briefly to oven. Sprinkle with lemon juice and serve with jelly, jam or syrup.
Makes two to four servings.
Suggestions
Optional (for parents only): Saute your favorite fruit and/or fresh berries in butter, add a dash of rum and spoon on top of pancake.
