3 tablespoons butter or margarine
8 eggs, beaten 1 1/2 cups shredded Monterey Jack or cheddar cheese 1 cup of your favorite salsa 1 cup coarsely-crushed tortilla chips 1 avocado, sliced |

Combine the eggs, cheese and 3 tablespoons of the salsa. Mix well.
Melt the butter or margarine in a skillet. Add the egg mixture and cook, stirring often, until eggs are almost set. Stir in the tortilla chips. Turn heat off and top with the remaining salsa and avocado slices. Serve immediately. |
