| Spinach and Eggs |

2 large onions, chopped
4 tablespoons olive oil 1 bunch fresh spinach, washed well and tough stems removed 1 to 2 teaspoons salt 1/2 teaspoon black pepper 6 eggs 1/4 teaspoon cayenne pepper |

Cook the onions in the olive oil until soft, about five minutes. Add the
spinach and cook two to three minutes, stirring. Add the salt, pepper and
cayenne. Mix well, and then spread mixture evenly in the bottom of the pan.
Make six holes and break one egg into each. Cover and cook over low heat until eggs are set, about five minutes. Serve. |
