Almond Cookies
Ingredients
2 1/2 cups all-purpose flour
2 teaspoons baking powder
Dash of salt
1/2 cup margarine
1 cup sugar
1 egg
1 teaspoon almond extract
1 egg, beaten
Blanched almonds
Directions
Combine the flour, baking powder and salt in a bowl. In another bowl, cream the margarine and sugar together. Stir in the egg and almond extract, and then add the dry ingredients. Stir well. (A stiff dough will form.)
Roll the mixture into 1-inch balls. Place the balls on a greased cookie sheet. Press one almond into the center of each ball and push to flatten slightly. Brush all the cookies with the beaten egg.
Bake at 350 degrees F for 19 to 21 minutes or until golden brown. Remove and cool completely.
