Carob Chip Cookies

This is a great comfort cookie served with hot chocolate – maybe after skating or sledding!! Also great as a bedtime snack.
Ingredients
2 1/2 cups unbleached flour*
1 teaspoon vanilla
1 cup butter*
1 1/2 cups raw sugar
2 eggs (extra large)
2 cups carob chips (or chocolate chips)
1/2 cup chopped nuts, optional
Directions
Cream butter, eggs and sugar together. Add the flour and mix well. Add vanilla and chips. Drop by spoonful onto ungreased cookie sheets. Bake at 375 degrees F for eight to 10 minutes.
Suggestions
* If you use margarine, it seems to make the dough very soft and does not work well.
* Regular flour may be used but unbleached works better.
