Chewy Chocolate Cookies
Kathy Espinoza
Another entry in our annual Christmas Cookie Contest.
Ingredients
1 1/4 cups margarine
2 cups sugar
2 eggs
2 teaspoons vanilla
2 cups flour
1 1/4 cups cocoa
2 teaspoons baking soda
1/8 teaspoon salt
1 cup chopped pecans
Directions
Cream the margarine and sugar together. Add the eggs and vanilla. In a separate bowl, combine the flour, cocoa, baking soda and salt. Blend into the creamed mixture, then stir in nuts. Divide into 8 rolls and wrap with wax paper, then foil, and freeze for two hours.
When ready to bake, cut each roll into 12 slices and bake at 350 degrees F for 10 to 12 minutes. Do not overbake. They will puff during baking and flatten upon cooling.
