Chocolate Chip Forgotten Cookies
Donna Smith
A wonderful addition to your holiday cookie tray!
Ingredients
2 eggs whites, at room temperature
Dash of salt
2/3 cup sugar
1/2 teaspoon vanilla extract
1 package (6 ounces) semi-sweet chocolate chips
1 cup chopped pecans
Directions
Beat the egg whites in a large mixing bowl until foamy; add the salt. Gradually add in the sugar, 2 tablespoons at a time, until stiff peaks form. Gently fold in the nuts, chips and vanilla extract.
Drop by heaping teaspoons onto an aluminum foil-lined baking sheet. Place cookies in an oven preheated to 350 degrees F, then immediately turn off the heat. Do not open the oven door for at least 12 hours, then gently peel the cookies off the foil. Store in airtight containers.
Suggestions
Make these cookies right before you go to bed and they'll be ready when you wake up in the morning.
