| Barbara Peterson's Fast and Chewy Chocolate-Chip Cookies By Barbara Peterson |
| 1 stick butter 2 eggs 1 tsp. vanilla extract 1 tsp. baking soda 1 1/2 cups brown sugar 1/4 tsp. salt 1 1/2 cups unbleached flour 1 1/2 cups chocolate chips |
| Melt the butter and set aside while mixing
for 30 seconds on medium speed the eggs through the salt in a mixer. Then add
the butter. Then add the flour and baking soda and, again, mix for 30 seconds
on medium speed. Add chocolate chips and stir to blend.
Roll in clean hands small balls of cookie dough and place on
baking sheet. Put sheet in oven preheated to 350 degrees F for 7 minutes on a
medium or low rack. When the bottom rim of the cookies starts to brown, move
the sheet up to a higher rack for another 5 minutes. For crispier cookies, keep
the sheet on the lower rack the entire time. |
