Good-For-You Banana Cookies
Ingredients
3 ripe bananas
1 cup chopped dates
2 cups rolled oats
1/3 cup vegetable oil
1 teaspoon vanilla extract
Directions
Mash the bananas in a large bowl. Add the oats, dates, oil and vanilla extract. Mix well, then let the batter sit for about 10 minutes.
Drop by heaping spoonfuls onto cookie sheets. Bake at 350 degrees F for about 20 minutes or until lightly browned. Remove and cool.
Suggestions
A great after-school snack! Raisins are great substitutes for the dates.
