Ice Box Oatmeal Cookies

Ingredients
1 cup white sugar
1 cup brown sugar
1 cup shortening
2 eggs
3 cups oatmeal (quick-cooking)
1 cup nuts
2 teaspoons vanilla
1 teaspoon salt
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
Directions
Cream sugar and shortening together, then beat in eggs. Add salt and flour mixed with baking soda. Add cinnamon and oatmeal, nuts and vanilla. Mold into four loaves and place in refrigerator to chill for several hours.
Slice and bake at 350 degrees F. Remove the cookies immediately from the pan.
Suggestions
These are also great to make up and freeze in loaves. Wrap the loaf in wax paper and then put in freezer back. Pull out while preparing supper and then slice and bake and you have homemade cookies for dessert.
