Lemon Curd Cookies

My family loves these tangy cookies!
Ingredients
1 roll (18 ounces) refrigerated sugar cookies
1/2 cup jarred lemon curd or lemon pie filling
1 cup flaked coconut
1/3 cup white chocolate baking chips
Directions
In a large bowl, combine the cookie dough and coconut. Mix well. Shape into balls and place on a cookie sheet.
Make a small hole in the center of each cookie with your thumb (be sure not to go all the way through). Fill each hole with a little of the lemon curd or pie filling.
Bake at 350 degrees F for 10 to 12 minutes or until lightly browned. Remove and allow to cool.
While the cookies cool, melt the vanilla chips in the microwave until smooth, about two minutes. With a spoon, drizzle over the cookies.
