Luscious Lemon Cookies
Try these luscious lemon cookies that melt in your mouth when you're in the mood for a real treat. This recipe yields 4 dozen cookies.
Ingredients
Cookies:
1 1/4 cups all-purpose flour
1/2 cup cornstarch
1/3 cup powdered sugar
3/4 cup softened butter
1 teaspoon grated lemon peel
1 tablespoon lemon juice
Frosting:
3/4 cup powdered sugar
1/4 cup softened butter
1 teaspoon grated lemon peel
1 teaspoon lemon juice
Directions
In large mixing bowl, combine all cookie ingredients. Beat the mixture at low speed, scraping the bowl frequently, until it is well mixed. Divide the dough in half and shape each half into an 8x1-inch roll. Wrap the rolls in plastic wrap and refrigerate until firm (one or two hours).
Preheat oven to 350 degrees F. With a sharp knife, cut each roll into 1/4-inch slices. Place the slices 2 inches apart on cookie sheets and bake for eight to 12 minutes, or until set (cookies will not brown). Let cool completely.
For frosting, combine all the ingredients and beat at medium speed, scraping the bowl often, until it's fluffy. Frost the cooled cookies.
