Oatmeal Cookies

Ingredients
1 1/2 cups sifted, unbleached white flour
1/2 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 cup brown sugar
1/4 cup granulated sugar
1/3 cup safflower oil
1/2 cup molasses
2 eggs
1 1/2 cups rolled oats
1 cup raisins
3/4 cup chopped almonds
Directions
In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger and sugars. Add safflower oil, molasses, eggs and rolled oats. Mix with a wooden spoon until blended. Sift in raisins and nuts. (Dough will be soft.)
Drop batter by heaping teaspoons onto nonstick baking sheet or for giant-sized cookies drop by 1/4 cup onto nonstick baking sheet. Bake at 350 degrees F for 12 to 15 minutes. Remove from oven. Let stand one minute. Remove from baking sheet. Cool on wire rack.
Suggestions
Serve with a tall glass of low-fat milk!
