Olive Oil Cookies
Cindy Tanner
A deliciously different cookie!
Ingredients
2 1/2 cups flour
1/2 teaspoon baking powder
Pinch salt
1/8 teaspoon black pepper
1/2 teaspoon dried rosemary
3/4 cup sugar
2 eggs
1/2 cup olive oil
3/4 cup, or a little more, dry red wine
Directions
Combine all the dry ingredients in a bowl. In another bowl, beat the eggs with the olive oil and wine. Slowly combine the wet and dry ingredients.
Drop by rounded teaspoons onto a cookie sheet that has been lightly oiled with olive oil. Bake at 375 degrees F for 12 to 13 minutes, or until they are lightly browned. Let cool one minute on the sheet, then remove to waxed paper.
