Sugar Cookies

Ingredients
3 cups all-purpose flour
1 teaspoon baking soda
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 egg
Optional: icing, colored sugar or other cookie decorations
Directions
Sift together the flour and baking soda. Set aside.
In a large bowl, beat the butter, sugar and vanilla until creamy. Add the egg and beat until light and fluffy; gradually blend in the flour mixture.
Divide the dough in half. Wrap in plastic wrap and chill for one hour in the refrigerator.
On a floured surface, roll half the dough to 3/16-inch thickness. With a floured cookie cutter, cut out the cookies. Roll out remaining dough, re-rolling scraps as necessary.
Suggestions
Serve with milk, tea, coffee or your favorite beverage.
If you want to decorate the cookies with colored sugar, first brush each unbaked cookie with a little beaten egg white, then sprinkle with the colored sugar before baking.
