Black Bean Chili
C. Dowlings
A hearty black bean chili cooked in the Crock Pot.
Ingredients
1 package (16 ounces) dried black beans, rinsed
4 cups hot water
1 onion, chopped
1 green bell pepper, chopped
2 tablespoons chili powder
2 tablespoons ground cumin
4 cloves garlic, minced
1 small can tomato paste
1 can (28 ounces) peeled whole tomatoes
Salt and pepper, to taste
Directions
Combine the black beans, water, onion, bell pepper, chili powder, cumin and garlic in a Crock Pot. Cover and cook on low seven to eight hours. Add the tomato paste and canned tomatoes and cook about 30 minutes more.
