Chicken with Tomatoes and Rice


Ingredients

1 chicken, about 3 pounds, cut into serving pieces
1/2 pound smoked sausage, but into pieces
1 green bell pepper, chopped
1 onion, chopped
2 cloves garlic, minced
2 cans (8 ounces each) tomato sauce
1/2 cup water
1 cup white rice
Salt and pepper, to taste
Freshly grated Parmesan cheese

Directions

Season the chicken with salt and pepper, and then place in a Crock Pot.

In a skillet, brown the sausage. Drain. Add to Crock Pot along with the bell pepper, onion, garlic, tomato sauce, water and rice. Stir. Cover and cook on low heat for eight to nine hours. Sprinkle with the Parmesan cheese, then serve.

Makes five to six servings.
