Crock Pot Ratatouille
A meatless main dish perfect for company!
Ingredients
2 cups chopped onion
2 to 3 cloves garlic, minced
2 tablespoons oil
4 tomatoes, peeled and coarsely chopped
2 large zucchini, cut into rounds
1 small eggplant, cut into chunks
1 bell pepper, cut into strips
1 1/2 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon dried thyme
Directions
In a skillet, saute the onion in the oil until tender. Add the garlic and saute about 30 seconds more. Transfer the onion to a Crock Pot. Add the remaining ingredients. Cover and cook on high three to four hours, or low for six to seven hours.
Suggestions
Serve with a salad and fresh-baked Italian bread.
