Golden Rice Bake
A creamy rice dish loaded with carrots and cheese you cook in the Crock Pot!
Ingredients
2 cups cooked white rice
2 cups grated carrots
1/2 cup chopped onion
2 cups shredded Monterey Jack, cheddar, mozzarella or Swiss cheese
1/2 cup milk
2 eggs, beaten
1/4 cup chopped onion
1 teaspoon salt
Pepper, to taste
Directions
Lightly grease the inside of a Crock Pot. Combine all the ingredients, mixing well. Pour into Crock Pot. Cover and cook on low for seven to eight hours.
Suggestions
Other vegetables could be substituted for the carrots. Zucchini or yellow squash would work well.
