Gone-All-Day Lentils and Sausage
Ingredients
1 package (16 ounces) dry lentils
1 can (16 ounces) diced tomatoes, drained
2 cans (14 ounces each) beef broth
2 1/2 cups water
1 cup chopped carrot
2 pounds smoked sausage, cut into bite-size pieces
1/2 cup chopped onion
Directions
Wash the lentils well. Combine all the ingredients in a Crock Pot. Mix well. Cook on low heat, covered, seven to eight hours. Stir before serving.
Suggestions
Ham or shredded chicken could be substituted for the sausage. Omit sausage for a vegetarian dish.
