| 2 cups cooked white rice 2 cups grated carrots ½ cup chopped onion 2 cups shredded Monterey Jack, cheddar, mozzarella or Swiss cheese 1/2 cup milk 2 eggs, beaten 1/4 cup chopped onion 1 teaspoon salt Pepper to taste |
| Lightly grease the inside of a Crock Pot.
Combine all the ingredients, mixing well. Pour into Crock Pot. Cover and cook
on low for 7-8 hours. |

| Other vegetables could be substituted for
the carrots. Zucchini or yellow squash would work well. |
