| Apple Oatmeal Cookies |
| Have these handy for after-school snacks! |
| 1/2 cup margarine, softened 1/2 cup honey 1 egg 1 1/2 teaspoons vanilla extract 3/4 cup whole wheat flour 1/2 teaspoon baking soda 1 teaspoon ground cinnamon 1 1/2 cups quick-cooking oats 1 apple, cored, peeled and chopped |
| Cream together the margarine, honey, egg
and vanilla. Set aside. Combine the flour, baking soda, cinnamon and oats. Add to creamed mixture. Fold in apples. Drop by heaping teaspoonfuls onto lightly greased cookie sheets. Bake at 375 degrees F for about 9 minutes. Cool on sheet 5 minutes then remove to cool completely. |
