| Brown Sugar Pound Cake |
| Cake: 1 cup butter 1/2 cup shortening 1 box, plus 1 cup light brown sugar 5 eggs 1/2 teaspoon baking powder 3 1/2 cups flour 1 cup milk 2 teaspoons vanilla Topping: 1/2 cup butter 1 cup chopped pecans 1 box powdered sugar Milk 1 teaspoon vanilla |
| Cream the butter, shortening and brown
sugar together. Add the eggs and mix well. Set aside. Combine the flour and baking powder. Add to wet ingredients, alternating with milk, until combined. Stir in vanilla. Pour into a greased tube pan. Bake at 325 degrees F about 1 1/2 hours. Cool, then spread with the topping. To make the topping, combine 1/4 cup of the butter and the pecans in a saucepan. Cook until lightly browned. Remove from heat and add the remaining 1/4 cup butter, sugar and vanilla, and enough milk to make it desired consistency. |
