| 2 cups sugar 4 whole eggs 3 cups grated carrots 2 teaspoons baking soda 1/2 teaspoon salt 1 teaspoon vanilla 1 cup canola oil 2 cups cake flour 1 teaspoon apple bake seasoning 8 teaspoon margarine 3 cups sugar, confectioner's 8 ounces cream cheese 1 teaspoon lemon extract |
| Preheat oven to 375 degrees F. Beat
granulated sugar, vanilla, eggs, and oil in large mixing bowl until smooth. Add
grated carrots, flour, baking soda, spices, and salt to sugar mixture. Beat at
medium speed for 2 minutes. Pour into greased and floured 9 x 13 pan. Bake for
45 to 50 minutes until done. Test with toothpick in center. Remove cake from
pan and cool on rack until completely cool. To make the frosting, cream the margarine and cream cheese together. Beat in 3 cups of powdered sugar and the lemon/water mixture (1 teaspoon lemon extract and enough water to make 1 tablespoon) until light and fluffy. Spread frosting over cake and refrigerate until ready to serve. |
