Crustless Pumpkin Pie
A creamy pumpkin pie that makes its own crust!
Ingredients
1 can (16 ounces) pumpkin (not pie filling)
1 can (12 ounces) evaporated milk
2 tablespoons margarine, softened
2 eggs
3/4 cup sugar
1/2 cup biscuit baking mix
2 1/2 teaspoons pumpkin pie spice
2 teaspoons vanilla
Directions
Beat all the ingredients with an electric mixer until smooth. Pour into a lightly greased pie plate. Bake at 350 degrees F about 50 minutes.
Suggestions
Serve with a dollop of whipped cream.
