Easy-to-Make Banana Chip Cake

Ingredients
2/3 cup maple syrup or honey
1/2 cup sunflower or safflower oil
Egg replacer for 2 eggs (real eggs work just as well)
3 ripe bananas, mashed
2 cups whole-wheat pastry flour, or 2 1/2 cups oat flour
1 teaspoon baking soda
Pinch of salt
1/2 cup carob chips
Directions
Preheat oven to 350 degrees F. Use a blender to cream together the syrup, oil and egg replacer. Add bananas and mix.
Combine flour, baking soda and salt. Add carob chips, then fold dry ingredients into creamed mixture, stirring just to moisten and combine. Do not over mix.
Pour batter into an ungreased 8-inch cake pan or bundt pan (cupcakes work too). Bake approximately 40 minutes (check after 35 minutes), or until cake tests done with a wooden toothpick. Cool on wire rack.
